  • ½ cup sugar-free powdered sugar
  • 1 tablespoon room temperature butter
  • 1 teaspoon lemon extract
  • 2 teaspoons water

Instructions:

  • Preheat the oven to 350 degrees Fahrenheit
  • Line a loaf pan with parchment paper
  • Fully combine the cream cheese, butter, and sweetener until smooth. This can be done in a food processor, blender, or by hand. 
  • Add the eggs, lemon juice, flour, baking powder, and zest. Continue to combine until smooth. The batter will be thick. 
  • Pour batter into the baking pan you have prepared. 
  • Bake for 60-70 minutes. (Between 45-50 minutes you may wish to cover the cake with foil.)
  • After cooling for 10 minutes, run a knife around the edges to loosen the parchment paper. Remove the cake and put it on a cooling rack. 
  • Mix up the icing, adding water a small amount at a time to ensure proper thickness. Spread glaze on the cooled cake. 
  • The cake should be stored in an airtight container.
