Is it Easy to Make Keto Ice Cream Bars at Home?

A great way to save money and control what goes into your treats is to make your own food. Yes, this includes ice cream bars!

Making your own keto ice cream bars is as simple as following a recipe.

When you create your snacks in your home you can be certain to use natural sweeteners, make flavors you are sure to love, and control the total carbs in the product.

To make ice cream bars or popsicles at home, you will need to purchase a mold. There are two main styles of molds available on Amazon. In one style the bars you are making will be standing up and in the other, you will lay them down in the freezer. Both work well.

You will also want to purchase food-grade popsicle sticks (or reusable sticks).

Our Recipe

For a delicious ice cream bar that tastes like rich vanilla ice cream, has zero sugar added, and is covered in delicious dark chocolate, you will only need six ingredients!

Ingredients:

  • 3/4 cup unsweetened almond milk

  • 1/2 cup heavy cream (or full-fat coconut milk for dairy-free)

  • 1/4 cup Besti Monk Fruit Allulose Blend

  • 1 tsp vanilla extract

  • 8 oz sugar-free dark chocolate chips

  • 1 1/2 tbsp coconut oil

Directions:

  • Whisk together the milk, heavy cream, granulated sugar, and vanilla.

  • Place sticks in the mold.

  • Pour mixture into molds and freeze overnight.

Next Day:

  • Line a cookie sheet with parchment paper.

  • Remove bars from mold and return to freezer.

  • Melt chocolate with coconut oil.

  • One at a time, remove the bars from the freezer to coat with the chocolate then return them to the freezer. Move on to the next bar.

  • Leave in the freezer a bit for the chocolate to freeze thoroughly.

  • Store bars in an airtight container or wrap in Saran Wrap.

Nutritional Information:

Each bar contains about 180 calories and 3 net carbs.

Can You Modify the Recipe?

Of course you can modify the recipe! We suggest trying the recipe as written first. For variations you can:

  • Dip the bars in nuts such as peanuts, slivered almonds or pecans.

  • Use a bit of cocoa in the ice cream mixture to give a chocolate ice cream taste.

  • Add peanut butter to the ice cream or chocolate for a different taste.
