Crispy Keto Peanut Butter Cookies (Quick Prep Time)

Just like a PB&J sandwich takes us back to our childhood, the same is true of good, old-fashioned PB cookies. Eating keto and cutting carbohydrates does not mean you have to give up all of those delicious goodies you crave.

Low-Carb Peanut Butter Cookies Recipe

Our favorite keto peanut butter cookie recipe is gluten-free, sugar-free and certain to satisfy your sweet tooth.

Ingredients

  • ⅔ cup almond flour

  • 1 teaspoon baking soda

  • ½ cup unsalted butter, melted

  • 1 cup creamy peanut butter(room temperature)

  • 1 cup brown sugar sugar-free sweetener (we prefer this Monk Fruit sweetener)

  • 1 large egg, beaten

  • 1 teaspoon vanilla extract

Instructions

  • Mix almond flour and baking soda in a large mixing bowl.

  • Add the butter, peanut butter and brown sugar artificial sweetener to the large bowl with the almond flour and baking soda. Mix until smooth.

  • In a small bowl, beat the egg and add vanilla. Add this mixture to the above ingredients and mix again until smooth.

  • Cover the cookie dough with plastic wrap and refrigerate for about 20 minutes.

  • Line a cookie sheet with parchment paper.

  • Preheat the oven to 350F.

  • Scoop the batter into 12 cookies evenly spaced on the prepared baking sheet (roughly 3 tablespoons each). Use a cookie scoop to get uniform cookies. Roll each into a ball, if desired.

  • If you like a crisscross pattern on your cookies, use a fork to flatten each ball lightly.

  • Bake cookies for 12 minutes or until the edges turn golden brown.

  • Remove from the oven and let cool for about 20 minutes. Serve.

  • Cookies can be stored in an airtight container.

Variations

Do you prefer making your cookies with coconut flour? For the above recipe, you can substitute the almond flour with 1/3 cup coconut flour.

For an interesting version of this keto peanut butter cookie recipe, add 1/2 cup of sugar-free chocolate chips to the dough. Voila - Peanut butter chocolate chip cookies!

If you prefer the taste of almond butter or cashew butter to peanut butter flavor, you can substitute either of them 1:1 in the recipe. The same is true for crunchy peanut butter if you like that better than creamy. Just be sure you are using natural peanut butter (or nut butter) when you make keto peanut butter treats.

  • Bake for 350 degrees for 10-12 minutes.
