What is the Difference Between These Cookies and Regular Chocolate Cookies?
First is the obvious difference: these have no flour. Leaving the flour out helps keep the carb count low. The next difference is they are sugar-free. Using artificial sweetener not only cuts calories and carbs, but they have a lower glycemic index.

2/3 cup sugar-free confectioners sugar

2 tablespoons Fiberyum Tapioca Soluble Fiber Syrup

2 tablespoons unsweetened cocoa powder

2 large eggs

1/4 cup sugar-free semi-sweet chocolate chips

1 tablespoon melted salted butter

2 tablespoons unsweetened almond milk

1 teaspoon vanilla extract

1 teaspoon baking powder
Instructions

Preheat oven to 350°F.

Line a baking sheet with parchment paper and set aside.

In a large bowl, mix the sugar-free powdered sugar, cocoa powder, and baking powder.

In a small bowl, whisk together the sugar-free powdered sugar, butter, eggs, almond milk and vanilla extract. Add the creamy almond butter and tapioca fiber.

Make a well in the dry ingredients and add the wet ingredients into the well. Mix them together.

Using a spatula, fold in the sugar-free chocolate chips. The dough should be thick.

Use a cookie scoop to put the chocolate cookie dough onto the prepared cookie sheet. This recipe typically makes 12 cookies. (If you make smaller cookies, adjust the baking time.)

Bake for 10 - 12 minutes in the preheated oven, until the tops look glossy and small cracks begin to appear.

Let the cookies cool slightly before removing them from the baking sheet.

Instructions

Preheat oven to 350°F. Line the baking sheet with parchment paper.

In a large bowl, add almond butter and cocoa powder. Stir until cocoa powder is completely incorporated into the almond butter.

Add in the syrup. As you continue to stir, you should notice that the spread is beginning to firm up like cookie dough. Stir until the dough is firm enough for you to grab and roll into a ball. Your dough ball may look oily, but this is actually just the syrup.

Using a 1 tbsp measuring spoon, measure out dough ball. Place them on the prepared baking sheets spaced 2 inches apart. Roll each dough ball between the palms of your hands. Flatten the dough balls into thick disks using the palm of your hand.

Bake for about 10 minutes or until cookies no longer look wet on the surface. The cookie tops will be slightly cracked. Let cookies cool on the baking sheet before removing.
