Easy Keto Birthday Cake Recipe (Extra Creamy)

Following a keto diet does not mean you can never indulge. One of the keys to success on any kind of diet is to recognize that keto desserts can (and should!) be enjoyed in moderation. This is especially true on your birthday!

What is the Difference Between Keto Cake and Regular Cake?

The first difference is sugar. Whereas regular cake has sugar, keto cakes are made with artificial sweeteners made of monk fruit, allulose, stevia, erythritol, etc.

The second major difference is that regular cake is usually made with wheat flour. Keto cakes are typically made with almond flour or coconut flour.

These two major changes help to make a product lower in total carbohydrates and net carbs.

Can Diabetics Eat Keto Cake?

Yes, diabetics can eat keto cake. Low-carb keto cakes will not have a negative impact on a person’s glycemic index.

Because of this, diabetics are way better off eating a keto cake than a regular cake.

Our Chocolate Keto Cake Recipe

This delicious low-carb cake can be made into a beautiful layer cake or, if you prefer, cupcakes. Our keto chocolate cake is delicious with vanilla buttercream frosting, cream cheese frosting, or even chocolate frosting! Our cake recipe is also gluten-free since it is made with almond flour.

  • Prep time: 15 minutes

  • Bake time: 20-25 minutes

  • Total time: 40 minutes (Note: You still need the cake to cool, and you will need time to make the frosting.)

Cake Ingredients

  • 2 cups almond flour

  • ¾ cup Swerve Sweetener

  • ⅔ cup cocoa powder

  • 1 tablespoon baking powder

  • 1 teaspoon espresso powder (optional)

  • ½ teaspoon salt

  • 1 cup mayonnaise

  • 3 large eggs (room temperature)

  • ⅓ cup water

  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.

  2. Prepare two 8-inch round cake pans by lining the bottom with parchment paper.

  3. In a large bowl, whisk the dry ingredients (almond flour, sweetener, cocoa powder, baking powder, espresso powder, and salt.).

  4. In a small mixing bowl, stir together the mayonnaise, eggs, water and vanilla extract. Once it is well combined, mix it into the dry ingredients using a hand mixer.

  5. Divide the cake batter evenly into the prepared pans.

  6. Baking time is 20-25 minutes. The cakes should be firm to the touch and a toothpick should come out clean.

  7. Remove from the oven. Cool for 15-20 minutes before inverting onto a wire rack to cool the rest of the way.

  8. Frost!

Nutritional Information

If you just make the cake and cut it into 14 servings, one serving size will be approximately 275 calories and 4 net carbs. Frosting and any candies, etc. will also add carbs.

Keto Buttercream Frosting Recipe

Ingredients

  • 1 1/2 cups unsalted butter (room temperature)

  • 1 cup sugar-free powdered sweetener

  • 1 tsp sugar free vanilla extract

  • 1/8 tsp sea salt

  • 1 tbsp heavy cream

Instructions

  1. Use a standing or hand mixer to cream the butter and granulated sweetener together.

  2. Once the sweetener is light and fluffy, beat in the cream, vanilla and salt.

  3. Beat for 2-4 minutes until the frosting is your desired consistency. (Add more heavy whipping cream if needed to thin the frosting.)

Recipe Variations

  • Chocolate Strawberry Cream Cheese: Layer whipped cream and strawberries between the two layers, frost with keto cream cheese frosting and decorate with more fresh strawberries.
