Easy Keto Flourless Chocolate Cake Recipe

What is the Difference Between a Flourless Cake and a Traditional Chocolate Cake?

Traditional chocolate cake is made with white baking flour and tends to be light and kind of fluffy. Flour-free chocolate cake will be more dense. Often described as a cross between a brownie, a truffle and mousse, it is a unique dessert.

Fudgy, Chocolatey Keto Cake

Prep Time

You should plan at least 2 hours of total time from starting the project to serving the dessert to guests.

Ingredients

  • 8 oz sugar-free dark chocolate (it can be a chocolate bar shaved or chocolate chips)

  • ¾ cup unsalted butter cut in pieces

  • ½ cup cocoa powder

  • ½ tsp salt

  • 1 tsp espresso powder

  • 6 large eggs, room temperature

  • 1 tsp sugar free vanilla extract

  • 1/3 cup powdered sweetener

  • 1/3 cup Fiberyum Tapioca Soluble Fiber Syrup

For the Chocolate Ganache

Directions

Preheat your oven to 325°F. You will make the cake either in a 9-inch springform pan or a round metal cake pan.

Line the pan with a piece of parchment paper and generously grease the sides.

The Cake

  • If you are working with a chocolate bar, you will need to cut it into small pieces. Place the chocolate (chopped pieces or chocolate chips) in a large bowl. Add butter to the chips and place the bowl on a double boiler to melt the chips (stirring constantly until it melts).

  • Separate the eggs. The egg whites should be put in a large mixing bowl with a pinch of salt. Use either a hand mixer or a standing mixer to beat the eggs until you have stiff peaks forming. Set aside.

  • In a medium mixing bowl, place the egg yolks and add the sweetener. Mix these two ingredients for 2-3 minutes.

  • Once the yolk mixture has lightened in color, pour it over the melted chocolate, whisking while you add the yolks to ensure they don’t cook.

  • Mix in the cocoa powder.

  • Next, gently fold the egg whites into the chocolate mixture. 1/2 at a time. When your cake batter is one consistent color and appears light and airy, add the vanilla extract and espresso powder.

  • Pour the batter into the pan you have prepared with parchment paper and by greasing the sides.

  • Bake the cake for 20-25 minutes. The top will appear set but will still jiggle a bit.

  • Allow the cake to cool completely prior to adding the glaze (or ganache).

The Sugar-Free Chocolate Cake Glaze

Chocolate ganache (or chocolate glaze) adds another delicious, low-carb dimension to this fudgy dessert.

  • Melt the sugar-free chocolate chips and stir in the heavy whipping cream until smooth.

  • Top the sugar-free flourless cake with the glaze.

  • Serve and top with fresh berries or sliced toasted almonds.

Nutritional Information

A serving size of one piece will have about 350 calories and 6 net carbs.

If you cut the cake into 12 small pieces, it will equal one serving. Please note that if you substitute any of the ingredients, your nutritional facts will be slightly different.

Serving Suggestions

This delicious cake can be garnished with raspberries, strawberries, slivered almonds, powdered sugar substitute, whipped cream or anything else you feel would compliment the chocolate flavor.
