What are Keto Snowball Cookies?

Snowball cookies are small, round cookies that have finely chopped nuts inside. They have a buttery taste and are rolled around in powdered sugar which is why they are called snowball cookies.

A popular Christmas cookie, these little gems are also known as Russian tea cakes, Mexican wedding cookies or butterballs.

To make them keto-friendly, certain adjustments need to be made. Using almond and coconut flour instead of regular flour is a great way to cut carbs, but not quite enough. Swapping the sugar for sugar-free sugar substitutes saves you a lot of calories and carbohydrates.

Low-Carb Snowball Cookie Recipe

When trying to make snowball cookies that are both low-carb and sugar-free, my cookies spread like traditional cookies rather than staying in a dense ball.

Although they do not look like the snowball cookie your grandma used to make, there is no arguing with the flavor. The taste is spot on but the density is not. This version is certainly worth a try!

Ingredients

  • 1 ¾ cups almond flour

  • 1 cup walnut pieces finely chopped (Since they should be almost ground you may wish to use a food processor)

  • 2 tablespoons coconut flour

  • 1 teaspoon baking powder

  • ½ teaspoon cinnamon

  • ¼ teaspoon salt

  • ½ cup butter softened

  • ½ cup sugar free brown sugar substitute

  • 1/4 cup Fiberyum Tapioca Soluble Fiber Syrup

  • 1 large egg at room temperature

  • 1 teaspoon vanilla extract

  • ½ cup sugar free powdered sugar

Instructions

  • Preheat oven to 325F. Line 2 baking sheets with parchment paper.

  • In a medium bowl, whisk together the almond flour, chopped walnuts, coconut flour, cinnamon, baking powder and salt.

  • In a large bowl, beat the butter with the sweetener until the mixture is light and fluffy. Beat in the egg, and vanilla extract. Mix in the almond flour mixture until the cookie dough comes together.

  • Roll into 1-inch dough balls and place them on the prepared cookie sheet about 1 inch apart. Bake for 16 to 18 minutes, or until the cookies are lightly golden brown. Remove from oven and let them cool on the pan.

  • Place the powdered sweetener (sugar free confectioners sugar) in a small shallow bowl. Roll each cookie until completely coated in the powdered sweetener.

  • Store cookies in an airtight container.
