Easy Keto Snowball Cookie Recipe (Buttery & Delicious)
This classic Christmas cookie shows up on the cookie tray at most people’s homes during the holiday season. The cookie dough is a classic shortbread flavor with a twist. Often called Mexican wedding cakes, it is easy to take this favorite cookie and make it keto-friendly.
You will like this one so much you will be compelled to write it down on a recipe card and give it to all your friends!
What are Keto Snowball Cookies?
Snowball cookies are small, round cookies that have finely chopped nuts inside. They have a buttery taste and are rolled around in powdered sugar which is why they are called snowball cookies.
A popular Christmas cookie, these little gems are also known as Russian tea cakes, Mexican wedding cookies or butterballs.
To make them keto-friendly, certain adjustments need to be made. Using almond and coconut flour instead of regular flour is a great way to cut carbs, but not quite enough. Swapping the sugar for sugar-free sugar substitutes saves you a lot of calories and carbohydrates.
In addition to being low carb, our keto recipes are also deliciously gluten-free.
Low-Carb Snowball Cookie Recipe
When trying to make snowball cookies that are both low-carb and sugar-free, my cookies spread like traditional cookies rather than staying in a dense ball.
Although they do not look like the snowball cookie your grandma used to make, there is no arguing with the flavor. The taste is spot on but the density is not. This version is certainly worth a try!
