Low Carb Swedish Meatballs Recipe

These delicious meatballs are not only keto but also gluten-free. You can make them with ground beef or a mixture of beef and ground pork

Meatball Ingredients

  • 1 lb ground beef

  • 1/2 cup grated onion

  • 1/4 cup almond flour

  • 1 large egg

  • 1/2 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon allspice

  • 2 tablespoons olive oil

Cream Sauce

  • 1 cup chicken or beef stock (or chicken or beef broth)

  • 1/2 cup heavy cream

  • 1 tsp Dijon mustard

  • 2 tsp soy sauce or Worcestershire sauce, optional

Instructions

  1. In a large mixing bowl, combine ground beef, grated onion, almond flour, egg, salt, pepper, garlic powder, and allspice. Mix well until combined. Roll the meat mixture into 20 small meatballs.

  2. In a large skillet, heat olive oil over medium-high heat. Add the meatballs and cook, turning every few minutes, until browned on each side and cooked through. You may need to cook in two batches to avoid overcrowding. Transfer to a plate while you make the sauce.

  3. Add stock and cream to the skillet and whisk over medium-low heat. Add Dijon mustard and Worcestershire sauce and bring to a simmer. Cook, stirring frequently, as the sauce thickens. Add extra salt and pepper to taste.

  4. Add the meatballs back to the skillet and simmer for another 1-2 minutes.
