Easy-To-Make Keto Monster Cookies Recipe

Did you assume that eating low carb meant you would have to sacrifice chewy and delicious treats such as Monster or chocolate chip cookies? It does not!

This delicious and easy-to-make recipe is low in carbohydrates as well as gluten-free. Plus, there are fun variations. To change the flavor, You can change the add-ins (such as substituting sugar-free M&M candies for chocolate chips).

Keto Monster Cookie Recipe

This recipe will take about 10 minutes of prep time to assemble the ingredients, 10 minutes to put the recipe together, 20 minutes to chill, 12 minutes to cook time, 5 minutes to rest on the pan, then another 10 minutes or so on the cooling rack.

From prep to enjoying the cookies, the total time will be about 60-70 minutes.

Ingredients

  • 1 cup natural peanut butter

  • ½ cup FiberYum Tapioca Syrup

  • 1 large egg (room temperature)

  • ¼ cup granular sweetener of choice 

  • ½ cup flax meal

  • ¾ cup sliced almonds

  • 1 tsp vanilla extract

  • ½ tsp cinnamon

  • ¼ tsp salt

  • ¼ tsp baking soda

  • ½ cup sugar-free chocolate chips

Directions

  1. Measure out the creamy peanut butter and tapioca syrup in a large bowl that is microwave-proof. Mix thoroughly, then microwave for 30 seconds. 

  2. Whip egg and solid sugar substitute together. Add to the warm ingredients.

  3. Combine the dry ingredients in a small mixing bowl: flax meal, almonds, vanilla, cinnamon, salt, and baking soda. Stir thoroughly into the wet ingredients you have warmed. If the mixture has adequately cooled, add the chocolate chips.

  4. Chill the dough for 20-30 minutes. 

  5. Preheat oven to 350 degrees while the dough chills.

  6. Cover cookie sheets with parchment paper.

  7. Measure the cookie dough into 24 tablespoon-sized balls and place them on the lined baking sheet. Before baking, flatten the balls a bit with the back of the spoon. 

  8. Bake for approximately 11-12 minutes. (If cooking two cookie sheets at once, rotate the pans halfway through baking.

  9. Leave the baked cookies on the cookie sheet for 5-6 minutes to finish cooking before putting them onto a cooling rack.

Monster Cookie Recipe Variations and Mix-ins

This delicious recipe can be changed to suit your taste:

  • Swap almond butter for peanut butter

  • Replace the chocolate chips with any sugar-free chocolate candies

  • Use dark chocolate chips or white chocolate chips.

  • Substitute diced pecans for the almond slivers.

  • Leave out the chocolate chips, and swap the almonds for peanuts for a flavor similar to your favorite peanut butter cookies.
