Low Carb Sugar-Free Chocolate Chip Muffins

You can bake these in a metal or silicone muffin pan, but be certain to either spray the pan or use muffin tin liners to keep the muffins from sticking.

The total time it will take you from start to finish is under 1 hour: prep time is just a few minutes and cook time is about 25 if using a traditional muffin pan.

Ingredients

  • 2 ½ cups almond flour

  • ½ cup Keto Goods Allulose Sweetener (or your favorite sugar substitute)

  • 3 tablespoons of Fiberyum Tapioca Soluble Fiber Syrup

  • 1 ½ teaspoon baking powder

  • 1 teaspoon sugar free cocoa powder

  • ¼ teaspoon salt

  • ⅓ cup coconut oil or melted butter (if using coconut oil, measure it as a solid then melt)

  • ⅓ cup unsweetened almond milk (regular or vanilla)

  • 3 large eggs (room temperature)

  • 1 teaspoon vanilla extract

  • ¾ cup sugar-free chocolate chips (regular or dark chocolate chips)

Steps

  • Preheat oven to 350 degrees.

  • Mix together all dry ingredients in a large bowl.

  • In a smaller bowl mix together all of the wet ingredients (oil or butter, milk, eggs, vanilla).

  • Pour the wet ingredients into the dry ingredients and mix well.

  • Fold in chocolate chips.

  • Distribute batter into 12 muffin cups (lined with paper liners)

  • Cook time is approximately 25 minutes.
