Keto-Friendly Strawberry Jam Recipe

Total time

25 minutes.

Prep work: 15 minutes to assemble ingredients, prep strawberries, etc. 10 minutes to mix up the recipe and get it into containers. It needs to refrigerate for a few hours prior to freezing any you wish to freeze.

Ingredients

Instructions

  1. Combine the water and the gelatin powder in a microwave-proof cup. Set it aside to allow the gelatin to bloom while you prepare further.

  2. Strawberries need to be prepared. This requires cutting off the leafy green top (hulling) and then cutting them into quarters.

  3. Puree the strawberries and the sweetener until smooth. This can be done in a blender or food processor.

  4. Heat the gelatin mixture in a microwave oven until piping hot, and the gelatin is dissolved. Stir well.

  5. Pour the hot gelatin mixture into the strawberry and sweetener puree while continuously mixing.

  6. Put the jam into containers. I put mine in small glass jars but you can also use plastic containers, if you prefer.

  7. Let thicken in the fridge overnight.

How to store it

The jam can be kept in the refrigerator for up to 10 days. Any jam you will not be able to enjoy within that time period can be frozen. This freezer jam can be kept for 3-4 months.
