  • 1 1/3 cup almond flour

  • 14 cup Fiberyum Tapioca Soluble Fiber Syrup

  • 1/4 cup sugar-free brown sugar sweetener (I love Truvia)

  • 1 large egg

  • 1/4 cup butter softened

  • 1/4 cup cream cheese at room temperature

  • 1/2 tsp salt

  • 1/2 tsp baking powder

  • 1/2 tsp cream of tartar

  • 2 tsp vanilla extract

Cinnamon Sugar Coating

  • 2 tbsp granular sweetener

  • 2 tsp ground cinnamon

Instructions

  • Preheat oven to 350 degrees.

  • Prepare a baking sheet by lining it with parchment paper, then set it aside.

  • In a medium bowl, combine all of the dry ingredients (coconut flour, almond flour, salt, baking powder, cream of tartar).

  • Get out your standing mixer. In the large mixing bowl, cream the butter, sweetener, and cream cheese until combined. Then, add in the egg and sugar-free vanilla extract.

  • Combine the wet and dry ingredients together. Cover the bowl with plastic wrap and chill in the refrigerator for 30 minutes.

  • Prepare the topping: combine the granulated sweetener and cinnamon in a small bowl.

  • Use a cookie scoop to scoop the cookie dough into balls of about 2 tablespoons each.

  • Roll the keto snickerdoodle cookies into the sugar and cinnamon mixture.

  • Place the cookie dough ball on the prepared cookie sheet and gently push down with the bottom of a glass.
